Cobbler Topping:

1/2 cup almond flour

2 tbsp tapioca flour (or arrowroot starch)

2 tbsp maple sugar (or coconut sugar)

1 tbsp vegan milk (almond, cashew, or coconut)

1 tsp cinnamon

1/2 tsp baking soda

2 tbsp coconut oil, melted

Peach Filling:

3 peaches, pitted, peeled and chopped (about 2 cups)

1 tsp tapioca flour (or arrowroot starch)

1 tbsp maple sugar (or coconut sugar)

Squeeze of lemon juice

1 tsp cinnamon

Instructions

1. Preheat oven to 375°F (190°C).

2. Make the cobbler topping by mixing all topping ingredients in a bowl. Refrigerate while you prepare the filling.

3. Chop peaches into 1/2-inch pieces. Add all filling ingredients to a bowl and toss to coat.

4. Spoon peach mixture evenly into 3 to 4 oven-safe jars, filling to the top.

5. Place jars on a rimmed baking sheet and bake for 10 minutes.

6. Remove jars and topping from fridge. Drop clumps of topping dough over each jar (do not overflow).

7. Cover jars loosely with foil and bake for 12 minutes.

8. Remove foil and bake an additional 5 minutes.

9. Carefully remove jars from oven and cool slightly. Serve warm with vegan ice cream, if desired.

Notes

If using frozen peaches, thaw and squeeze out excess moisture.

Arrowroot starch can replace tapioca flour.

Coconut sugar or brown sugar can be used instead of maple sugar.

Always place jars on a rimmed baking sheet to prevent overflow.
