Ingredients
4 ripe peaches, diced
1/4 cup red onion, finely chopped
1 jalapeño, seeded and minced
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
1/4 teaspoon salt
Instructions
1. Dice peaches and place in a bowl.
2. Add chopped onion, jalapeño, and cilantro.
3. Squeeze in lime juice and sprinkle with salt.
4. Stir gently until combined.
5. Let sit for 10–15 minutes.
6. Serve fresh or refrigerate.
Notes
For spicy peach salsa, add extra jalapeño or chipotle powder.
For grilled peach salsa, char halved peaches on grill for 3–4 minutes before dicing.
To make peach avocado salsa, fold in 1 diced ripe avocado before serving.
For canning: Simmer mixture for 10 minutes and water-bath process for 15 minutes.
