Ingredients

  • 1 cup cottage cheese
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  2. Combine cottage cheese, cocoa powder, almond flour, honey, eggs, baking powder, vanilla extract, and salt in a bowl. Mix until smooth.
  3. Fold in dark chocolate chips evenly.
  4. Spoon batter into muffin tin, filling each cup 3/4 full. Bake for 15-20 minutes until tops are set but centers are gooey.
  5. Cool in tin for a few minutes before transferring to a wire rack. Serve warm.
