Ingredients
1/2 cup rolled oats
1/2 cup cottage cheese
2 large eggs
1 scoop vanilla protein powder
1/2 tsp baking powder
1/4 tsp cinnamon (optional)
1/2 tsp vanilla extract
Pinch of salt
Instructions
1. Add oats, cottage cheese, eggs, protein powder, baking powder, vanilla, and salt to a blender.
2. Blend until smooth and thick.
3. Let batter rest for 5 minutes.
4. Heat a nonstick skillet over medium heat and lightly grease.
5. Pour batter into small rounds (about 1/4 cup each).
6. Cook 2–3 minutes until bubbles form, then flip and cook another 2 minutes.
7. Serve warm with yogurt, fruit, or syrup.
Notes
Use mini chocolate chips or blueberries for variety.
Letting the batter rest thickens it naturally.
Double the batch and refrigerate for meal prep.
