Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1½ cups full-fat cottage cheese
  • 4 oz cream cheese, softened
  • 3/4 cup pure pumpkin puree
  • 1/2 cup maple syrup or sweetener of choice
  • 2 large eggs
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8-inch pan with parchment paper.
  2. Mix the graham cracker crumbs and melted butter. Press firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
  3. Blot the pumpkin puree with paper towels to remove excess water.
  4. Blend cottage cheese and cream cheese until smooth.
  5. Add blotted pumpkin, maple syrup, eggs, pumpkin pie spice, and vanilla. Blend until smooth.
  6. Pour filling over cooled crust.
  7. Bake for 35-40 minutes until edges are set and center is slightly jiggly.
  8. Cool completely at room temperature, then chill for at least 4 hours before slicing.
