Instructions
- For the batter, blend the cottage cheese, eggs, and maple syrup in a medium bowl until smooth.
- Stir in the cocoa powder and almond flour until just combined. Pour the mixture into an 8×8 inch pan.
- For the swirl, whisk together the pumpkin puree, maple syrup, and pumpkin pie spice in a separate bowl.
- Dollop the pumpkin mixture over the brownie batter in the pan. Using a knife, gently swirl it into the chocolate batter to create a marbled effect.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the brownies to cool completely in the pan before cutting into squares. This helps them set and enhances the fudgy texture.
