    • 1 1/2 tsp pumpkin pie spice
    • 1/2 tsp salt
    • 1 1/4 cups buttermilk
    • 1/2 cup pumpkin purée
    • 1 large egg
    • 2 tbsp melted unsalted butter
    • 1 tsp vanilla extract

Instructions

  1. Mix streusel ingredients until crumbly.
  2. Whisk pancake dry ingredients together.
  3. Combine wet ingredients and mix into dry ingredients.
  4. Heat griddle or pan over medium heat.
  5. Pour batter onto griddle.
  6. Sprinkle streusel on the wet top side.
  7. Flip when bubbles form.
  8. Cook until golden.
