- Streusel:
- 1/4 cup flour

- 2 tbsp cold butter, cubed
- Pancakes:
- 1 1/2 cups all-purpose flour
- 1 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 1/4 cups buttermilk
- 1/2 cup pumpkin purée
- 1 large egg
- 2 tbsp melted unsalted butter
- 1 tsp vanilla extract
Instructions
- Mix streusel ingredients until crumbly.
- Whisk pancake dry ingredients together.
- Combine wet ingredients and mix into dry ingredients.
- Heat griddle or pan over medium heat.
- Pour batter onto griddle.
- Sprinkle streusel on the wet top side.
- Flip when bubbles form.
- Cook until golden.

- Use fresh pumpkin purée for best flavor.
- Adjust cinnamon to taste.
- Serve warm with maple syrup.
