A comforting and easy-to-make casserole using rotisserie chicken and stuffing mix, perfect for a family dinner.

Ingredients

  • Mrs. Dash onion and herb seasoning (to taste)
  • 2 cups shredded chicken (from a rotisserie chicken)
  • Nonstick cooking spray
  • Pepper (to taste)
  • Salt (to taste)
  • 2 cans cream of chicken soup
  • 1/4 cup milk
  • 1 package stovetop stuffing mix
  • Aluminum foil

Instructions

  1. Preheat your oven to 350°F (175°C). Coat a 13×9 glass baking dish with nonstick cooking spray.
  2. Place 2 cups of shredded chicken evenly in the baking dish. Season with pepper, salt, and Mrs. Dash onion and herb seasoning.
  3. Prepare the stovetop stuffing mix according to package instructions. Microwave for 5-6 minutes and let it steam.
  4. In a bowl, mix 2 cans of cream of chicken soup with ¼ cup milk. Pour over the chicken and spread evenly.
  5. Top with the prepared stuffing mix. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes.
  6. Let the casserole cool for 5-10 minutes before serving.

Notes

  • Use fat-free cream of chicken soup for a lighter version.
  • Let the casserole cool slightly before serving to allow the layers to set.
