- 1 cup full-fat cottage cheese (blended until smooth)
- 1 ½ cups self-rising flour
- 1 large yellow onion, caramelized (cooked down to about 1/2 cup volume)
- 3/4 cup shredded Gruyère cheese
- 1 tsp fresh thyme leaves
- 1/4 tsp black pepper
Instructions
- Caramelize the onion: Slice it thin and cook slowly in butter for 30–40 mins until deep brown and jammy. Cool completely.
- Preheat oven to 400°F (200°C).
- Mix the blended cottage cheese, flour, thyme, and pepper in a bowl.
- Add the cooled caramelized onions and Gruyère. Mix by hand until just combined.
- Drop 8 biscuits onto a lined baking sheet. Bake for 15–18 minutes until the cheese is bubbly and browned on top.
Notes
- Caramelized onions must be cooked until dry to avoid a wet dough.
- Drain onions on a paper towel if oily before adding to the dough.
