Instructions

  1. Soak the dates in hot water along with the baking soda for 10 minutes, then mash them lightly to form a smooth mixture.
  2. In a separate bowl, whisk together the eggs, olive oil, and vanilla extract until well combined.
  3. In another bowl, mix the flour, baking powder, cinnamon, and salt.
  4. Combine the wet ingredients with the date mixture, then gently fold in the dry ingredients until just combined—be careful not to overmix.
  5. Stir in the chopped walnuts, distributing them evenly throughout the batter.
  6. Pour the batter into a greased loaf pan and bake at 350°F for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
