Instructions
- Soak the pitted dates in hot water with the baking soda for 10 minutes, then mash them lightly to form a paste.
- In a large bowl, whisk together the eggs, olive oil, and vanilla extract until smooth.
- In another bowl, mix the whole wheat flour (or almond flour), baking powder, ground cinnamon, and a pinch of salt.
- Combine the wet ingredients with the date mixture, mixing well, then gently fold in the dry ingredients until just combined.
- Stir in the chopped walnuts until evenly distributed.
- Pour the batter into a greased loaf pan and bake in a preheated oven at 350°F for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan before slicing.
