Ingredients

3 ripe peaches, diced

1 jalapeño, finely chopped (seeds removed for less heat)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1/4 tsp sea salt

Optional: red chili flakes or hot sauce

Instructions

1. Dice the peaches into small pieces.

2. Chop the red onion, jalapeño, and cilantro.

3. Combine all ingredients in a mixing bowl.

4. Add lime juice and salt, and stir to combine.

5. Let the salsa sit for 10–15 minutes to allow flavors to meld.

6. Taste and adjust heat or salt as desired.

7. Serve immediately or refrigerate for 1–2 hours for deeper flavor.

Notes

For extra heat, leave jalapeño seeds in or add serrano/habanero.

Canned peaches work if drained well—avoid those in syrup.

Pairs well with grilled meats, chips, eggs, and tacos.
