A moist and flavorful pumpkin bread inspired by Starbucks, perfect for fall or any time of year.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, room temperature
  • 1 cup cane sugar
  • ¼ cup packed light brown sugar
  • 4 eggs
  • 1 cup canned pumpkin
  • ½ teaspoon vanilla extract
  • ¼ cup pumpkin seeds (optional)

Instructions

  1. Preheat oven to 350°F and spray a loaf pan with nonstick cooking spray.
  2. In a medium bowl, whisk flour, pumpkin pie spice, baking soda, and salt. Set aside.
  3. In a stand mixer or large bowl with a hand mixer, mix butter, cane sugar, and brown sugar until light and fluffy (2 minutes). Add eggs one at a time, then mix in pumpkin and vanilla.
  4. Add dry ingredients and mix until combined. Pour into the pan and sprinkle with pumpkin seeds if using.
  5. Bake 50–55 minutes or until a toothpick comes out clean. Cool completely before slicing.

  • Use room-temperature ingredients for even mixing.
  • For extra moisture, add ¼ cup Greek yogurt.
