Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the banana and mix with cottage cheese, eggs, honey, vanilla extract, lemon zest, and lemon juice.
- Add rolled oats, flour, baking powder, and salt. Stir until combined.
- Fold in diced strawberries.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Let cool before serving.
