- 1 cup cottage cheese
- 1 cup rolled oats
- 1 cup diced strawberries
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 cup milk
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
- In a large bowl, combine the cottage cheese, rolled oats, diced strawberries, vanilla extract, honey, baking powder, cinnamon, milk, and egg. Mix until well combined.
- Spoon the batter evenly into the mini muffin tin, filling each cup about 3/4 full.
- Bake for 15–18 minutes, or until the bites are golden and a toothpick inserted in the center comes out clean.
- Allow them to cool for a few minutes in the tin before transferring to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- Freeze for longer storage and reheat in the microwave or oven.
