Ingredients

  • 3 large sweet potatoes (cooked, peeled)
  • 1 cup cottage cheese (blended smooth)
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 cup chopped pecans
  • 2 tbsp brown sugar
  • 1 tbsp butter

Instructions

  1. Whip the cooked sweet potatoes, blended cottage cheese, maple syrup, cinnamon, vanilla, and egg together until smooth.
  2. Spread the mixture in a greased baking dish. Bake at 350°F (175°C) for 25 minutes.
  3. Mix pecans, brown sugar, and melted butter for the streusel.
  4. Sprinkle the streusel on the baked base.
  5. Return to the oven and bake for 10–15 minutes until golden.

Notes

  • Blend cottage cheese for a smoother texture.
  • Adjust sweetness with more or less maple syrup.
  • Store leftovers in the fridge for up to 3 days.
