- 3 large sweet potatoes (cooked, peeled)
- 1 cup cottage cheese (blended smooth)
- 2 tbsp maple syrup
- 1 tsp cinnamon
- 1/2 tsp vanilla
- 1 egg
- 1/2 cup chopped pecans
- 2 tbsp brown sugar
- 1 tbsp butter
Instructions
- Whip the cooked sweet potatoes, blended cottage cheese, maple syrup, cinnamon, vanilla, and egg together until smooth.
- Spread the mixture in a greased baking dish. Bake at 350°F (175°C) for 25 minutes.
- Mix pecans, brown sugar, and melted butter for the streusel.
- Sprinkle the streusel on the baked base.
- Return to the oven and bake for 10–15 minutes until golden.
Notes
- Blend cottage cheese for a smoother texture.
- Adjust sweetness with more or less maple syrup.
- Store leftovers in the fridge for up to 3 days.
