  • 1 cup corn (Frozen or canned.)
  • 1 cup diced tomatoes (Fresh or canned.)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (For topping.)
  • 2 tablespoons olive oil

Instructions

  1. Cook the rice according to package instructions, using water or chicken broth.
  2. Heat olive oil in a skillet over medium heat. Add ground beef or turkey and cook until browned.
  3. Drain excess fat from the skillet. Add taco seasoning and stir to combine.
  4. Add black beans, corn, and diced tomatoes to the skillet. Cook until heated through.
