- 1 lb Ground Beef
- 1 Onion, diced
- 1 bag (14 oz) Coleslaw Mix (or 1/2 head chopped cabbage)
- 1 packet Taco Seasoning (or homemade blend)
- 1 can (10 oz) Rotel (Diced Tomatoes & Green Chilies) – DRAINED
- 1 cup Cottage Cheese (blended)
- 1 cup Pepper Jack Cheese, shredded
Instructions
- In a large skillet, cook the ground beef and diced onion over medium heat until browned. Drain any excess fat.
- Add the taco seasoning and coleslaw mix. Stir well.
- Sauté for 5–8 minutes until cabbage softens.
- Stir in drained Rotel and cook for 2 more minutes.
- Lower heat and add blended cottage cheese and Pepper Jack. Stir until melted.
Notes
- Serve with tortilla chips.
- Can be enjoyed as a standalone bowl.
