Ingredients

  • 2 cups shredded chicken
  • 1 cup cottage cheese
  • 2 bell peppers (1 red, 1 green), diced
  • 1 small onion, diced
  • 1 tbsp taco seasoning
  • 1/2 cup shredded cheddar/Mexican blend
  • 1 tbsp oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the oil over medium-high heat. Sauté the diced peppers and onions for about 5–7 minutes until charred and dry.
  3. In a large bowl, mix together the shredded chicken, cooked peppers and onions, cottage cheese, and taco seasoning.
  4. Transfer the mixture into a baking dish and top with shredded cheese.
  5. Bake for 20 minutes, or until cheese is melted and bubbly.

Notes

  • Charring the peppers and onions prevents a watery casserole.
  • Use pre-cooked chicken for faster prep.
