- 2 cups shredded chicken
- 1 cup cottage cheese
- 2 bell peppers (1 red, 1 green), diced
- 1 small onion, diced
- 1 tbsp taco seasoning
- 1/2 cup shredded cheddar/Mexican blend
- 1 tbsp oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the oil over medium-high heat. Sauté the diced peppers and onions for about 5–7 minutes until charred and dry.
- In a large bowl, mix together the shredded chicken, cooked peppers and onions, cottage cheese, and taco seasoning.
- Transfer the mixture into a baking dish and top with shredded cheese.
- Bake for 20 minutes, or until cheese is melted and bubbly.
Notes
- Charring the peppers and onions prevents a watery casserole.
- Use pre-cooked chicken for faster prep.
