Easy and healthy Triple Berry Cottage Cheese Pancake Bites perfect for breakfast or snacks.

Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 2 large eggs
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp honey
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract

Instructions

  1. Blend cottage cheese, oats, eggs, honey, baking powder, and vanilla in a blender until smooth.
  2. Fold in the mixed berries gently.
  3. Heat a skillet over medium heat and lightly grease it.
  4. Pour small amounts of batter onto the skillet to form bite-sized pancakes.
  5. Cook until bubbles form on the surface, then flip and cook the other side until golden.
  6. Serve warm.

Notes

  • You can use frozen berries if fresh ones aren’t available.
