- 1 cup cottage cheese
- 1 cup rolled oats
- 2 large eggs
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp honey
- 1 tsp baking powder
- 1/2 tsp vanilla extract
Instructions
- Blend cottage cheese, oats, eggs, honey, baking powder, and vanilla in a blender until smooth.
- Fold in the mixed berries gently.
- Heat a skillet over medium heat and lightly grease it.
- Pour small amounts of batter onto the skillet to form bite-sized pancakes.
- Cook until bubbles form on the surface, then flip and cook the other side until golden.
- Serve warm.
Notes
- You can use frozen berries if fresh ones aren’t available.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in a toaster or microwave before serving.
