  • 2 teaspoons cornstarch
  • Dash red gel food coloring
  • 1 cup unsalted butter, softened (use dairy-free if preferred)
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups icing sugar
  • 2 teaspoons milk (use dairy-free if preferred)
  • Pinch salt

Instructions

  1. Preheat the oven to 350°F and prepare a cupcake pan with paper liners.
  2. In a large microwave-safe bowl, melt chocolate chips, butter, and milk in 20-second intervals until smooth.
  3. Whisk in instant coffee until dissolved. Add vanilla, egg, and sugar, then mix well.
  4. Gently whisk in gluten-free flour, cocoa powder, baking soda, baking powder, and salt until fully combined.
  5. Fill cupcake liners halfway with batter. Bake at 350°F for 15-19 minutes or until a toothpick comes out clean.
  6. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the strawberry jam, cook strawberries with cornstarch and food coloring until thickened.
