Ingredients
Scale
- 1 tbsp ground flax + 3 tbsp water (flax egg)
- 1 1/2 cups flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 1/4 cups almond or oat milk
- 1/2 cup pumpkin purée
- 2 tbsp melted coconut oil
- 1 tsp vanilla
Instructions
- Make flax egg and let sit 5 minutes.
- Mix dry ingredients in one bowl, wet in another.
- Combine, mix until just blended.
- Cook on greased griddle until golden.
Notes
- Use pure pumpkin purée, not pumpkin pie filling.
- Adjust sweetness by adding more sugar if needed.
