Ingredients

  • 1 1/2 cups flour
  • 1 tbsp sugar

  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 1/4 cups almond or oat milk
  • 1/2 cup pumpkin purée
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla

Instructions

  1. Make flax egg and let sit 5 minutes.
  2. Mix dry ingredients in one bowl, wet in another.
  3. Combine, mix until just blended.
  4. Cook on greased griddle until golden.

Notes

  • Use pure pumpkin purée, not pumpkin pie filling.
  • Adjust sweetness by adding more sugar if needed.
