These breadsticks have become a favorite in our house—chewy, cheesy, and incredibly easy to whip up! With just two main ingredients, they make a perfect snack or side dish, especially when paired with marinara sauce for dipping. Plus, they’re a hit with the kids!

Ingredients

  • 1 cup cottage cheese (240 g)
  • 1 cup almond flour (100 g)
  • 1 large egg
  • ½ tsp garlic powder (optional)
  • ½ tsp Italian seasoning (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a blender or food processor, combine the cottage cheese and egg. Blend until the mixture is smooth and creamy.
  3. In a mixing bowl, combine the almond flour, garlic powder, Italian seasoning, and salt. Pour in the blended mixture and stir until a soft dough forms.
  4. Transfer the dough onto the prepared baking sheet. Shape it into a rectangle about ½ inch (1.25 cm) thick. Using a knife or spatula, lightly score the dough into breadstick shapes, but do not cut all the way through.
  5. Bake in the preheated oven for 18–22 minutes, until the top is lightly golden and firm to the touch.
  6. Remove from the oven and let cool slightly before cutting into individual breadsticks. Serve them warm with marinara sauce, garlic butter, or your favorite dip.

Notes

  • For crispier edges, you can bake them an additional 3–4 minutes.
  • For an extra cheesy crust, sprinkle shredded mozzarella on top before baking.
  • Store any leftovers in the fridge for up to 3 days or freeze for later enjoyment.
