Ingredients

  • 1 cup cottage cheese
  • 1 large egg
  • ½ cup almond flour (or breadcrumbs for extra crunch)
  • ¼ cup grated Parmesan cheese
  • ¼ tsp garlic powder (optional)
  • Pinch of salt
  • ½ tsp paprika or smoked paprika (optional)
  • Cooking spray or a little oil for brushing

Instructions

  1. In a bowl, mix cottage cheese, egg, almond flour, Parmesan, garlic powder, salt, and paprika until a thick, moldable dough forms.
  2. Shape the mixture into small sticks, about 3 inches long and ½ inch thick.
  3. Preheat your air fryer to 375°F (190°C) for 3 to 5 minutes.
  4. Lightly spray or brush the basket with oil. Arrange the sticks in a single layer with space between them. Air fry for 10 to 12 minutes, flipping halfway through, until golden and crispy.
  5. Let them rest for 2 minutes before serving warm with marinara, ranch, or a spicy yogurt dip.

Notes

  • Use almond flour for a low-carb version or breadcrumbs if you want extra crunch.
  • Make sure the sticks are evenly shaped so they cook at the same rate.
  • Do not skip the resting time. It helps the sticks firm up before serving.
