- 1 lb Ground Turkey (browned and drained)
- 4 cups Broccoli and Cauliflower (blotted dry)
- 1 cup Cottage Cheese (blended)
- 1/2 cup Shredded Mozzarella
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground turkey in a skillet over medium heat. Once cooked through, drain it in a colander to remove excess liquid.
- While the turkey drains, blot the broccoli and cauliflower with paper towels until as dry as possible.
- In a large mixing bowl, combine the drained turkey and dry vegetables. Add the blended cottage cheese and toss until everything is well mixed.
- Spread the mixture evenly in a baking dish. Top with the shredded mozzarella.
- Bake for 20 to 25 minutes, or until the cheese is bubbly and golden. Serve warm.
Notes
- Blot the vegetables well before mixing to prevent a watery bake.
- Blend the cottage cheese smooth before adding it for a creamy, even texture.
- You can use fresh or frozen broccoli and cauliflower. If using frozen, thaw and dry them thoroughly first.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
- Add garlic powder, onion powder, or Italian seasoning to the mix for extra flavor.
