A simple and hearty bake made with ground turkey, broccoli, cauliflower, cottage cheese, and mozzarella. It comes together in 35 minutes and makes a filling, protein-packed meal for the whole family.

Ingredients

  • 1 lb Ground Turkey (browned and drained)
  • 4 cups Broccoli and Cauliflower (blotted dry)
  • 1 cup Cottage Cheese (blended)
  • 1/2 cup Shredded Mozzarella

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground turkey in a skillet over medium heat. Once cooked through, drain it in a colander to remove excess liquid.
  3. While the turkey drains, blot the broccoli and cauliflower with paper towels until as dry as possible.
  4. In a large mixing bowl, combine the drained turkey and dry vegetables. Add the blended cottage cheese and toss until everything is well mixed.
  5. Spread the mixture evenly in a baking dish. Top with the shredded mozzarella.
  6. Bake for 20 to 25 minutes, or until the cheese is bubbly and golden. Serve warm.

Notes

  • Blot the vegetables well before mixing to prevent a watery bake.
  • Blend the cottage cheese smooth before adding it for a creamy, even texture.
  • You can use fresh or frozen broccoli and cauliflower. If using frozen, thaw and dry them thoroughly first.
