Ingredients

  • 1 ¾ pounds (794 g) green cabbage, chopped
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 1214 ounces (304397 g) smoked kielbasa sausage, sliced
  • 3 cloves garlic, chopped
  • 2 tablespoons (28 g) butter
  • 2 tablespoons (33 g) tomato paste
  • 1 ½ teaspoons dried thyme
  • ½ teaspoon black pepper
  • 1 bay leaf
  • 8 cups (1.9 L) beef or chicken broth
  • Salt to taste

Instructions

  1. Melt butter in a Dutch oven over medium heat. Add kielbasa and cook until browned.
  2. Add onion and garlic. Cook for 2-3 minutes.
  3. Stir in tomato paste, thyme, and black pepper. Cook for 1 minute.
  4. Add cabbage, carrots, bay leaf, and broth. Bring to a simmer.
  5. Cook for 15-20 minutes until vegetables are tender. Adjust seasoning.
