Ingredients

  • 1 cup mashed ripe bananas
  • 1 cup grated carrots
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup whole wheat flour
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan or use a silicone donut mold.
  2. In a large bowl, combine the mashed bananas, grated carrots, cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the baking powder, cinnamon, salt, and whole wheat flour.
  4. Gently fold the dry mixture into the wet ingredients until just combined. If using, fold in the chopped walnuts.
  5. Spoon the batter into the donut pan, filling each cavity about 2/3 full.
  6. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

  • For a dairy-free option, replace cottage cheese with almond or coconut yogurt.
