- 2 chicken breasts, diced
- 1 cup black beans (cooked)
- 1 cup corn kernels
- 1 cup cottage cheese
- 1 tbsp chili powder
- 1 tbsp olive oil
- Salt & pepper, to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts, seasoning with salt and pepper. Cook until the chicken is no longer pink, about 6–8 minutes.
- Stir in the chili powder, black beans, and corn. Cook for another 3–4 minutes, allowing the flavors to meld together.
- Remove the skillet from the heat and gently fold in the cottage cheese until everything is well combined.
- Serve warm, garnished with fresh cilantro if desired.

- Garnish with fresh cilantro for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
