Cottage Cheese Banana Walnut Bars are a simple, protein-packed snack made with wholesome ingredients. They come together in minutes and bake into soft, satisfying bars perfect for breakfast or an afternoon snack.

  • Total Time: 40 minutes
  • Yield: 12 bars 1x

Ingredients

Scale
  • 2 cups cottage cheese
  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. In a large bowl, combine the cottage cheese, mashed bananas, honey, and vanilla extract. Mix until smooth and well combined.
  3. In another bowl, mix the rolled oats, chopped walnuts, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool before slicing them into squares.

Notes

  • Use ripe bananas for natural sweetness and better texture.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • You can freeze the bars individually for up to 2 months. Thaw overnight in the fridge before eating.
  • Swap walnuts for pecans or almonds if you prefer a different nut.
  • Reduce honey to 2 tablespoons if you want a less sweet bar.
  • Full-fat or low-fat cottage cheese both work well in this recipe.
