Ingredients
Scale
- 1 cup cottage cheese (240 ml | ~225 g)
- 1 cup almond flour (96 g)
- 2 tbsp honey (30 ml)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a donut pan with oil or nonstick spray.
- In a mixing bowl, or in a blender for a smoother texture, combine the cottage cheese, almond flour, and honey until a thick, smooth batter forms.
- Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full. Smooth the tops if needed.
- Bake for 15 to 18 minutes, or until the donuts are lightly golden and fully set.
- Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use full-fat cottage cheese for a richer texture.
- Blend the batter for a smoother, more uniform donut.
- Do not overfill the donut pan cavities or the shape will not hold.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Top with fresh fruit, a drizzle of honey, or a dusting of powdered sugar before serving.
- These donuts freeze well for up to 1 month.
