Ingredients

  • 1 cup full-fat (4%) cottage cheese
  • 1.5 cups frozen mango chunks (partially thawed for 5 minutes)
  • ¼ cup canned full-fat coconut milk (chilled)
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • Toppings: 2 tbsp unsweetened toasted coconut flakes, 1 tbsp chia seeds, fresh mango slices

Instructions

  1. Add cottage cheese, partially thawed mango chunks, chilled coconut milk, honey, and vanilla extract into a high-speed blender or food processor.
  2. Blend on high for 45 to 60 seconds, stopping to scrape down the sides as needed, until thick, velvety, and completely smooth.
  3. Scoop into a bowl using a spoon (it should be thick like soft-serve ice cream).
  4. Top with toasted coconut flakes, chia seeds, and fresh fruit right before serving.

Notes

  • Do not add liquid milk or water to help blend! Using frozen fruit with thick, full-fat cottage cheese and chilled coconut milk creates an ultra-thick spoonable bowl instead of a watery drinkable smoothie.
