Ingredients

  • 2 cups cottage cheese
  • 1 cup pecan halves, finely chopped
  • 1/2 cup maple syrup
  • 1/4 cup almond flour
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with 24 liners.
  2. In a blender, combine the cottage cheese, eggs, maple syrup, vanilla extract, cinnamon, and salt. Blend until smooth and creamy.
  3. Gently stir in the chopped pecans and almond flour until just combined. Do not overmix.
  4. Spoon the batter into the muffin liners, filling each about 3/4 full. Bake for 20 to 25 minutes or until set and a toothpick comes out clean.
  5. Let the bites cool before serving. Enjoy them warm or at room temperature.
