- 2 cups cottage cheese
- 1 cup pecan halves, finely chopped
- 1/2 cup maple syrup
- 1/4 cup almond flour
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon

Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with 24 liners.
- In a blender, combine the cottage cheese, eggs, maple syrup, vanilla extract, cinnamon, and salt. Blend until smooth and creamy.
- Gently stir in the chopped pecans and almond flour until just combined. Do not overmix.
- Spoon the batter into the muffin liners, filling each about 3/4 full. Bake for 20 to 25 minutes or until set and a toothpick comes out clean.
- Let the bites cool before serving. Enjoy them warm or at room temperature.
Notes
- Store leftovers in an airtight container in the fridge for up to 5 days.
- You can freeze these bites for up to 2 months. Thaw overnight in the fridge before serving.
- Use full-fat cottage cheese for a richer texture.
- Make sure to blend the cottage cheese mixture well so the bites have a smooth, even base.
- You can swap maple syrup with honey if preferred.
