Ingredients

  • 1 cup full-fat (4%) cottage cheese, blended smooth
  • 6 large eggs
  • 1/2 lb lean breakfast sausage, cooked, crumbled, and drained
  • 1/2 cup shredded sharp cheddar cheese
  • 1 tsp ground or finely chopped fresh sage
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F. Lightly grease an 8×8-inch baking dish.
  2. In a large bowl, whisk the smooth cottage cheese, eggs, sage, garlic powder, salt, and pepper until frothy.
  3. Fold in the cooked sausage and half of the cheddar cheese.
  4. Pour the mixture into the prepared dish and top with the remaining cheddar.
  5. Bake for 30 to 35 minutes, until the center is set and does not jiggle.

Notes

  • Drain the cooked sausage in a colander and press with paper towels to remove excess grease. This prevents a watery bottom.
