Ingredients
Scale
- 1 cup cottage cheese
- 1 cup almond flour
Instructions
- In a mixing bowl, combine the cottage cheese and almond flour. Stir until a smooth, well-blended mixture forms.
- Heat a non-stick skillet over medium heat until warm.
- Scoop about 1/4 cup of the mixture onto the skillet and gently spread it into a thin round shape. Cook for 2 to 3 minutes per side, or until lightly golden and cooked through.
- Transfer the cooked tortilla to a plate and repeat with the remaining mixture. Serve warm with your favorite fillings, spreads, or toppings.
Notes
- Use full-fat cottage cheese for a richer texture and better binding.
- Spread the batter as thin as possible for a more flexible tortilla.
- Let the tortillas cool slightly before adding fillings to prevent tearing.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave before serving.
