A quick and easy chicken salad with a sweet and tangy twist. Chopped chicken breast is mixed with mayonnaise, dried cranberries, green apple, pecans, and a splash of lime juice. Great for sandwiches, wraps, or served over greens.

Ingredients

  • 2 cooked chicken breast halves, chopped
  • 1/2 cup mayonnaise, or to taste
  • 2 green onions, chopped
  • 1/2 cup sweetened dried cranberries
  • 1/4 green apple, shredded
  • 1/4 cup chopped pecans
  • 1 tablespoon lime juice
  • 1/4 teaspoon dried dill weed
  • Salt and black pepper, to taste

Instructions

  1. Add chopped chicken and mayonnaise to a medium bowl. Stir until the chicken is evenly coated.
  2. Add green onions, dried cranberries, shredded apple, pecans, lime juice, dill weed, salt, and pepper. Stir everything together.
  3. Serve right away or cover and refrigerate for a few hours or overnight for deeper flavor.

Notes

  • Use rotisserie chicken to save time.
  • Swap pecans for walnuts if that is what you have on hand.
  • Adjust mayonnaise to your preferred consistency.
  • This salad tastes better the next day after the flavors have had time to blend.
