Ingredients

  • 2 cups cooked chicken breast (shredded or diced)
  • 1 cup cottage cheese
  • 1/2 cup cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 1 cup spinach (fresh or thawed frozen, drained)
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt & black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a medium bowl, mix together the cottage cheese and cream cheese until smooth and well combined.
  3. Stir in the shredded mozzarella, cooked chicken, spinach, and seasonings. Mix until everything is evenly incorporated.
  4. Transfer the mixture to the prepared baking dish and spread it out evenly.
  5. Bake in the preheated oven for 25–30 minutes, or until the casserole is hot and bubbly with a lightly golden top.
  6. Let it cool for about 5 minutes before serving.
