- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 cup oat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
- 2 tbsp melted butter or coconut oil
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Add cottage cheese, eggs, maple syrup, vanilla extract, and melted butter to a blender. Blend until smooth.
- Pour the blended mixture into a bowl. Whisk in cocoa powder, oat flour, baking powder, and salt until just combined.
- Fold in most of the dark chocolate chips, saving a small handful for the top.
- Spread the batter evenly into the prepared pan. Scatter the reserved chocolate chips on top.
- Bake for 22 to 28 minutes, until the edges are set and the center is slightly soft.
- Let the brownies cool completely in the pan before slicing for the best fudgy texture.
- For richer brownies, refrigerate them overnight before serving.
Notes
- Do not overbake. Pull them out when the center still looks slightly underdone as they firm up while cooling.
- Blending the cottage cheese fully is key to a smooth batter with no lumps.
- You can swap maple syrup with honey at a 1:1 ratio.
