- 2 Tbsp olive oil
- Salt and Pepper to taste
- 1/2 bunch fresh parsley
- 1/4 cup crumbled feta cheese
Instructions
- Preheat the oven to 400ºF.
- Peel and slice the carrots into one-inch pieces.
- Line a baking sheet with parchment.
- Toss carrots with olive oil, salt, and pepper.
- Roast for 40 minutes, stirring once halfway.
- Let carrots cool slightly.
- Chop parsley and crumble feta.
- Combine carrots, parsley, and feta in a bowl.
- Toss and serve warm.
