Ingredients

  • 4 smoked sausage links (sliced into coins)
  • 3 medium russet potatoes (cubed into 1/2-inch pieces)
  • 1 bell pepper (chopped)
  • 1/2 yellow onion (chopped)
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • Garlic powder, salt, and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, combine the sliced sausage, cubed potatoes, pepper, and onion. Drizzle everything generously with olive oil.
  3. Sprinkle the Italian seasoning, garlic powder, salt, and pepper over the top. Toss directly on the pan until everything is evenly coated.
  4. Spread into a single flat layer. Bake for 30–35 minutes, stirring once halfway through, until the potatoes are fork-tender and golden brown.

Notes

  • Use your favorite smoked sausage variety, such as beef, turkey, or pork.
  • For extra crispiness, broil for 2-3 minutes at the end of baking.
