- 4 smoked sausage links (sliced into coins)
- 3 medium russet potatoes (cubed into 1/2-inch pieces)
- 1 bell pepper (chopped)
- 1/2 yellow onion (chopped)
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- Garlic powder, salt, and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, combine the sliced sausage, cubed potatoes, pepper, and onion. Drizzle everything generously with olive oil.
- Sprinkle the Italian seasoning, garlic powder, salt, and pepper over the top. Toss directly on the pan until everything is evenly coated.
- Spread into a single flat layer. Bake for 30–35 minutes, stirring once halfway through, until the potatoes are fork-tender and golden brown.
Notes
- Use your favorite smoked sausage variety, such as beef, turkey, or pork.
- For extra crispiness, broil for 2-3 minutes at the end of baking.
