- 2 ripe bananas (about 240 g)
- 2 eggs
- 1 cup rolled oats (80 g)
- 1 tsp baking powder (4 g)
- 1 tbsp honey (21 g)
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- Blend bananas, eggs, oats, baking powder and honey until smooth.
- Pour batter into prepared pan and smooth the top.
- Bake for 25 minutes or until golden and toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to wire rack before slicing.
Notes
- Use very ripe bananas for best sweetness
- Let bread cool completely before slicing for clean cuts
- Store leftovers in airtight container for up to 3 days
