- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder or 1 clove garlic, minced
- 1/2 tsp baking powder
- Salt and pepper to taste
- Optional: chopped parsley or chives for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a small baking dish or line it with parchment paper.
- In a mixing bowl, combine the cottage cheese, eggs, Parmesan, garlic, baking powder, salt, and pepper. Mix until smooth and well-combined.
- Pour the mixture into the prepared baking dish. Bake for 25 to 30 minutes, or until the top is golden and the center is set.
- Let the bake cool slightly before slicing. Serve warm and top with chopped parsley or chives if desired.
Notes
- Use full-fat cottage cheese for a richer texture and better structure.
- Fresh minced garlic gives a stronger flavor than garlic powder. Use whichever you prefer.
- The bake is done when the edges pull away slightly from the dish and the center does not jiggle.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
- You can add shredded mozzarella or chopped spinach to the batter for extra flavor and variety.
