  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1/2 small onion, finely diced
  • 1/2 cup small curd cottage cheese, unblended
  • 1 cup shredded sharp cheddar cheese
  • 1/2 tsp garlic salt
  • 1/2 tsp onion powder
  • Black pepper to taste
  • Small amount of oil for cooking

Instructions

  1. Heat a small amount of oil in a skillet over medium-high heat. Add the sweet potato cubes and cook until tender and slightly crispy on the outside. Set them aside on a plate.
  2. In the same skillet, add the ground turkey and diced onion. Cook over medium-high heat until the turkey is fully browned and the onion is soft.
  3. Pour the cooked turkey into a fine strainer and drain away all excess fat and liquid completely.
  4. Return the drained turkey to the skillet over low heat. Season with garlic salt, onion powder, and black pepper. Stir to coat evenly.
  5. Add the unblended cottage cheese and the cooked sweet potato cubes directly into the skillet. Stir gently for 1 to 2 minutes. The heat will melt the cottage cheese curds into a thick, creamy sauce that binds everything together.
  6. Divide the mixture into bowls and top each one with shredded cheddar cheese while the mixture is still hot so the cheese melts fully.

Notes

  • Cut your sweet potatoes small and cook them until crispy so they hold their shape when mixed with the turkey.
  • Always drain your ground turkey through a fine strainer to remove excess grease. This keeps the cottage cheese sauce thick and creamy.
  • Do not blend the cottage cheese. The whole curds melt into the hot turkey mixture and form the sauce naturally.
  • Serve immediately for the best texture and flavor.
  • You can swap sharp cheddar for pepper jack if you want a little heat.
