- 1 lb lean ground turkey
- 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
- 1/2 small onion, finely diced
- 1/2 cup small curd cottage cheese, unblended
- 1 cup shredded sharp cheddar cheese
- 1/2 tsp garlic salt
- 1/2 tsp onion powder
- Black pepper to taste
- Small amount of oil for cooking
Instructions
- Heat a small amount of oil in a skillet over medium-high heat. Add the sweet potato cubes and cook until tender and slightly crispy on the outside. Set them aside on a plate.
- In the same skillet, add the ground turkey and diced onion. Cook over medium-high heat until the turkey is fully browned and the onion is soft.
- Pour the cooked turkey into a fine strainer and drain away all excess fat and liquid completely.
- Return the drained turkey to the skillet over low heat. Season with garlic salt, onion powder, and black pepper. Stir to coat evenly.
- Add the unblended cottage cheese and the cooked sweet potato cubes directly into the skillet. Stir gently for 1 to 2 minutes. The heat will melt the cottage cheese curds into a thick, creamy sauce that binds everything together.
- Divide the mixture into bowls and top each one with shredded cheddar cheese while the mixture is still hot so the cheese melts fully.
Notes
- Cut your sweet potatoes small and cook them until crispy so they hold their shape when mixed with the turkey.
- Always drain your ground turkey through a fine strainer to remove excess grease. This keeps the cottage cheese sauce thick and creamy.
- Do not blend the cottage cheese. The whole curds melt into the hot turkey mixture and form the sauce naturally.
- Serve immediately for the best texture and flavor.
- You can swap sharp cheddar for pepper jack if you want a little heat.
