- 1 lb breakfast sausage, cooked and cooled
- 2 cups protein pancake mix (such as Kodiak Cakes)
- 1.5 cups water
- ¼ cup sugar-free maple syrup
- 1 cup shredded cheddar cheese (sharp cheddar preferred)
Instructions
- Preheat your oven to 400°F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or butter.
- In a large mixing bowl, prepare the pancake batter according to package instructions. For Kodiak mix, this means combining the mix with water until smooth.
- Add the cooked breakfast sausage to the batter. Make sure your sausage is completely cooled first, or it’ll make your batter too warm.
- Fold in the shredded cheddar cheese and sugar-free maple syrup. Mix everything until just combined – don’t overmix or your bites will be tough.
- Spoon the batter into each muffin cup, filling them about ¾ full. This gives them room to rise without overflowing.
- Bake for 18-23 minutes until the protein McGriddle bites are golden brown and a toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the pan before removing. This prevents them from falling apart when you take them out.
Notes
- Store in an airtight container in the refrigerator for up to 5 days.
- Reheat in the microwave for 30 seconds before serving.
- You can freeze these bites for up to 3 months.
