Ingredients
1/2 cup high protein cottage cheese (4%)
1 1/2 cups blanched superfine almond flour
2 tbsp sugar-free sweetener (monkfruit erythritol blend)
1/4 cup + 2 tbsp frozen wild blueberries
Instructions
1. Preheat oven to 350°F (175°C) and line a large baking sheet with parchment paper.
2. Blend the cottage cheese until completely smooth and lump-free.
3. In a large bowl, whisk together almond flour and sweetener.
4. Scrape in the blended cottage cheese and stir until a thick dough forms.
5. Fold in frozen blueberries gently without thawing them.
6. Using a 1.5 tbsp cookie scoop, portion the dough and roll into smooth balls.
7. Place on the prepared baking sheet, spacing about 1 inch apart.
8. Bake for 20–22 minutes until lightly golden and cooked through.
9. Cool completely on a wire rack before serving.
Notes
Be sure to drain excess water from the cottage cheese before blending.
Keep blueberries frozen until the moment you fold them in.
Let donuts cool completely to firm up the texture before serving.
