Instructions
- Add the cottage cheese to a blender or food processor and blend until completely smooth, about 30 to 60 seconds.
- Add the key lime juice, lime zest, honey, and vanilla extract to the blended cottage cheese.
- Blend again for 15 seconds until everything is fully combined.
- Taste the mixture and adjust sweetness or lime juice to your preference.
- Pour the mixture into a bowl.
- Top with crushed graham crackers, a dollop of whipped cream, and extra lime zest.
- Serve immediately or refrigerate for up to 24 hours before serving.
