Ingredients

  • 1 cup cottage cheese (blended silky smooth)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp honey or maple syrup
  • 1/2 cup fresh blueberries

Instructions

  1. Line a muffin tin with 6 silicone liners or use a baking sheet lined with parchment paper.
  2. Add the cottage cheese, lemon juice, lemon zest, and honey to a blender. Blend on high until the mixture is completely smooth and thick.
  3. Wash the fresh blueberries and pat them completely dry with a paper towel. Do not use frozen berries as they release juice and create icy patches.
  4. Gently fold the dry blueberries into the lemon cottage cheese mixture.
  5. Scoop the mixture evenly into 6 silicone muffin cups or drop into mounds on your parchment paper.
  6. Freeze for at least 2 to 3 hours until fully solid. Let them sit at room temperature for 5 minutes before serving.
