Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the zucchini, cottage cheese, mozzarella cheese, eggs, bell peppers, onion, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
- Pour the mixture into a greased 9×9-inch baking dish and spread it evenly.
- Bake for 30-35 minutes, or until the top is golden and the casserole is set.
- Let it cool for a few minutes before slicing and serving.
Notes
- Cut your zucchini into uniform pieces so everything cooks evenly.
- Pat the zucchini dry with a paper towel before mixing to reduce excess moisture.
- You can swap mozzarella for cheddar or Parmesan for a different flavor.
