Ingredients

  • 2 ½ cups Oat Flour (blended from rolled oats)
  • ¾ cup Granulated Sugar
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 1 cup Full-Fat Cottage Cheese
  • 2 Large Eggs (room temperature)
  • ⅓ cup Unsalted Butter (melted and cooled) or Avocado Oil
  • 1 tsp Vanilla Extract
  • 1 ½ cups Frozen Mixed Berries (Raspberries, Blackberries, Blueberries)
  • 1 tbsp Oat Flour (for tossing berries)

Instructions

  1. Blend cottage cheese until smooth.
  2. Whisk blended cottage cheese, eggs, melted butter, and vanilla in a bowl.
  3. In another bowl, mix oat flour, sugar, baking powder, baking soda, and salt.
  4. Fold dry ingredients into wet ingredients and let rest for 15 minutes.
  5. Toss frozen berries with 1 tbsp oat flour.
  6. Gently fold berries into the batter.
  7. Preheat oven to 425°F (220°C). Line a muffin tin.
  8. Fill muffin liners to the top and bake at 425°F for 5 minutes.
  9. Reduce heat to 350°F (175°C) and bake for 15–18 minutes.
  10. Cool in pan for 5 minutes, then transfer to a wire rack.

  • Do not thaw berries to prevent bleeding.
  • Blending cottage cheese ensures a smooth texture.
