Ingredients

  • 1 cup cottage cheese, blended silky smooth
  • 1/3 cup creamy peanut butter
  • 1/3 cup old-fashioned rolled oats
  • 2 tbsp honey or pure maple syrup
  • 2 tbsp mini chocolate chips or mini M&Ms

Instructions

  1. Line a muffin tin with 6 silicone liners or line a small baking sheet with parchment paper.
  2. In a medium mixing bowl, whisk together the blended cottage cheese, creamy peanut butter, and honey until you get a thick, smooth peanut cream with no curds.
  3. Stir the rolled oats into the peanut cream. Let the mixture sit for 5 minutes so the oats absorb surface moisture and the bites freeze creamy instead of icy.
  4. Fold in the mini chocolate chips or mini M&Ms.
  5. Divide the mixture evenly among the 6 silicone cups and press down firmly with the back of a spoon.
  6. Freeze for at least 2 hours until completely solid. Pop them out and let them sit on the counter for 3 minutes before eating.
