- 2 tbsp honey or pure maple syrup
- 2 tbsp mini chocolate chips or mini M&Ms
Instructions
- Line a muffin tin with 6 silicone liners or line a small baking sheet with parchment paper.
- In a medium mixing bowl, whisk together the blended cottage cheese, creamy peanut butter, and honey until you get a thick, smooth peanut cream with no curds.
- Stir the rolled oats into the peanut cream. Let the mixture sit for 5 minutes so the oats absorb surface moisture and the bites freeze creamy instead of icy.
- Fold in the mini chocolate chips or mini M&Ms.
- Divide the mixture evenly among the 6 silicone cups and press down firmly with the back of a spoon.
- Freeze for at least 2 hours until completely solid. Pop them out and let them sit on the counter for 3 minutes before eating.
Notes
- Blend the cottage cheese completely smooth before mixing. Any curds will affect the final texture.
- Use silicone liners for easy, clean removal from the muffin tin.
- Do not skip the 5-minute oat resting step. It makes the bites creamy rather than watery after freezing.
- Store in an airtight container in the freezer for up to 2 weeks.
- Let each bite sit at room temperature for 3 minutes before eating for the best texture.
- Swap mini M&Ms for mini chocolate chips to keep these refined-sugar-free.
