- 8 oz Cremini (Baby Bella) Mushrooms, sliced
- 1/2 Onion, diced
- 1 tbsp Butter
- 1 1/2 cups Cottage Cheese (blended smooth)
- 4 Large Eggs
- 1/2 cup Milk
- 1 cup Shredded Swiss or Gruyere Cheese
- 1 tsp Dried Thyme
- 1/2 tsp Garlic Powder
Instructions
- Heat butter in a skillet over medium-high heat. Add mushrooms and onions. Cook for 8-10 minutes until browned and dry. Let cool slightly.
- Whisk blended cottage cheese, eggs, milk, thyme, garlic powder, and Swiss cheese in a bowl until combined.
- Preheat oven to 375°F (190°C). Grease a pie dish. Spread mushroom mixture evenly at the bottom. Pour egg batter over it.
- Bake for 35-40 minutes until the center is set and the top is golden.
